Weights are estimates. Together, the ingredients weigh about 425 g before cooking, which is about 215 g per serving.
Steps
Bring a large pot of water to a boil. Add the noodles of your choice and cook until al dente according to package instructions.
Before draining the noodles, reserve about 1/4 cup of the starchy noodle water.
In a mixing bowl, combine the peanut butter, light soy sauce, dark soy sauce, minced garlic, vinegar, sugar, cream, and the reserved noodle water.
Whisk the sauce ingredients together until the mixture is completely smooth and emulsified.
Add the cooked noodles to the sauce and mix thoroughly until every strand is well-coated.
Transfer the noodles to a serving bowl.
Optionally garnish with sesame seeds, sliced scallions, and chili flakes to your preference.
Notes
The creator emphasizes that garnishes are optional and you should eat it how you like. For the best texture, ensure the noodle water is still warm when whisking the sauce to help melt the peanut butter.
