Apple Turnovers

- 2 Red apple (cored and diced)
- 0.33 Lemon (juice squeezed)
- 1 Egg (for brushing)
- 275 g Puff pastry, fresh (from the refrigerated section)
- 50 g Brown sugar
- 30 g Cane sugar, unrefined
- 1 tsp Cinnamon, ground
- 1 tbsp Cornstarch
- 0.25 tsp Ginger, ground
- 0.25 tsp Nutmeg, ground
- Salt (a pinch)
- 30 g Butter

Preheat the oven to 200 °C top and bottom heat (recommended) or 180 °C fan.

Halve the lemon and squeeze out all the juice.

Wash and core the red apples, then cut into small dice. Mix with the lemon juice to prevent them from browning.

Melt the butter in a pan. Add the diced apples along with the brown sugar, cinnamon, ginger, nutmeg, and a pinch of salt. Sauté over medium heat until the apples become slightly soft.

Mix the cornstarch with a little cold water until smooth and stir it into the apple mixture. Bring to a brief boil until the liquid thickens, then remove from the heat and let cool.

Roll out the fresh puff pastry and cut into 6 equal-sized rectangles.

Distribute the cooled apple filling evenly onto one half of each pastry piece, leaving a border. Fold the other half of the dough over and press the edges down firmly with a fork.

Whisk the egg and brush the turnovers with it. Sprinkle with the unrefined cane sugar.

Place the apple turnovers on a baking tray lined with parchment paper and bake in the preheated oven for approx. 15-20 minutes until golden brown.
Notes
The quantities have been adjusted for 6 servings based on the raw data. Make sure to let the apple filling cool slightly before filling to prevent the puff pastry from becoming too soft.
