Street Corn Sweet Potato Bowl

Ingredients
- 4 oz 96/4 lean ground beef (raw)
- salt (to taste, for seasoning beef and potatoes)
- black pepper (to taste, for seasoning beef and potatoes)
- garlic powder (to taste, for seasoning beef)
- Siete taco seasoning (used for simmering beef)
- water (for simmering the taco meat)
- 120 g sweet potatoes (diced into chunks)
- olive oil spray (for air frying)
- 85 g Del Monte canned southwest style corn (drained, about 1/3 cup)
- 25 g purple onion (diced)
- 14 g queso fresco cheese (crumbled)
- 50 g non fat plain Greek yogurt
- 7 g lite mayo
- 1 dash Tony’s seasoning (or chili powder, to taste)
- 1 squeeze lime (fresh juice)

Season the raw ground beef with salt, pepper, and garlic powder.

Cook the beef in a pan over medium-high heat until browned. Drain any excess grease.

Add a splash of water and the taco seasoning to the beef. Let it simmer until the liquid has reduced and the meat is well-coated.

Dice the sweet potatoes into chunks. Lightly spray with olive oil spray and season with salt and pepper.

Air fry the sweet potatoes at 400°F (200°C) for 12-15 minutes, or until tender and slightly crispy. (Note: if cooking multiple servings, you may need more time).

While the potatoes cook, dice the purple onion and drain the canned corn.

In a small bowl, combine the 1/3 cup of corn, diced onion, Greek yogurt, lite mayo, and crumbled queso fresco. Mix well.

Stir in the Tony’s seasoning (or chili powder) to taste and add a squeeze of fresh lime juice.

To assemble, add the cooked sweet potatoes and taco meat to a bowl or microwave-safe dish.

Top the meat and potatoes with the street corn mixture. Finish with additional cheese if desired.
Notes
Meal Prep Tip: If preparing for later, store the corn mix separately. Reheat only the meat and potatoes, then add the cold street corn mix on top. These bowls are highly customizable; adjust ingredient quantities to fit your specific macros.
