Ingredients

  • 4 oz 96/4 lean ground beef (raw)
  • salt (to taste, for seasoning beef and potatoes)
  • black pepper (to taste, for seasoning beef and potatoes)
  • garlic powder (to taste, for seasoning beef)
  • Siete taco seasoning (used for simmering beef)
  • water (for simmering the taco meat)
  • 120 g sweet potatoes (diced into chunks)
  • olive oil spray (for air frying)
  • 85 g Del Monte canned southwest style corn (drained, about 1/3 cup)
  • 25 g purple onion (diced)
  • 14 g queso fresco cheese (crumbled)
  • 50 g non fat plain Greek yogurt
  • 7 g lite mayo
  • 1 dash Tony’s seasoning (or chili powder, to taste)
  • 1 squeeze lime (fresh juice)

Steps

    Season the raw ground beef with salt, pepper, and garlic powder.

    Cook the beef in a pan over medium-high heat until browned. Drain any excess grease.

    Add a splash of water and the taco seasoning to the beef. Let it simmer until the liquid has reduced and the meat is well-coated.

    Dice the sweet potatoes into chunks. Lightly spray with olive oil spray and season with salt and pepper.

    Air fry the sweet potatoes at 400°F (200°C) for 12-15 minutes, or until tender and slightly crispy. (Note: if cooking multiple servings, you may need more time).

    While the potatoes cook, dice the purple onion and drain the canned corn.

    In a small bowl, combine the 1/3 cup of corn, diced onion, Greek yogurt, lite mayo, and crumbled queso fresco. Mix well.

    Stir in the Tony’s seasoning (or chili powder) to taste and add a squeeze of fresh lime juice.

    To assemble, add the cooked sweet potatoes and taco meat to a bowl or microwave-safe dish.

Notes
