Steps

  1. Place the chicken thighs in a container with a lid. Add the coconut milk, soy sauce (or liquid aminos), honey (or brown sugar), and red curry paste.

  2. Close the container and shake to combine the marinade ingredients around the chicken.

  3. Add the curry powder, close the container, and shake again to distribute it. Let the chicken marinate for about 1 hour if possible; the creator instead lets it sit while making the sauce and heating the grill.

  4. Pour the marinade over the chicken, then leave it to sit while you prepare the sauce and heat the grill.

  5. For the peanut sauce, put the coconut milk, peanut butter, soy sauce, fish sauce, and sriracha in a bowl. Add brown sugar instead of honey, as the creator does, or use honey as their usual option.

  6. Whisk the sauce until smooth. Taste it and add more peanut butter if desired; the extra amount is not specified.

  7. Grill the chicken for about 6 minutes per side, or until done. Alternatively, cook it on the stove, in a pan, or on a cookie sheet in a 375°F (190 °C) oven for about 20 minutes.

  8. Serve the chicken over rice. Cut it up if desired, top with green onion and peanut sauce, and serve.

Notes

The transcript gives no amount for the chicken, rice, or green onion, and does not specify rice preparation. Soy sauce is listed, but the creator says they use liquid aminos without stating its amount. The sauce quantity of additional peanut butter is unspecified.
