Ingredients
- 2 lb chicken breast (sliced into strips)
- 3 bell peppers (any color, sliced)
- 1 onion (sliced)
- 1 oz fajita seasoning (one standard packet or equivalent)
- 14.5 oz diced tomatoes (one can, undrained)

Slice the 2 pounds of chicken into strips and place them into the slow cooker.

Slice the 3 bell peppers and 1 onion into thin strips and add them to the pot.

Sprinkle the fajita seasoning over the chicken and vegetables.

Add the can of diced tomatoes (including the juices) to the slow cooker.

Cover and cook on high for 2 to 3 hours, or on low for 4 to 6 hours, until the chicken is cooked through and the vegetables are tender.

Notes
For best results, do not add extra water as the chicken and vegetables will release their own juices during the slow cooking process. Serve with tortillas, sour cream, avocado, or lime wedges.
