Malva Pudding

- 2 cup flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 2 eggs
- 0.5 cup butter (melted)
- 0.25 cup sugar
- 1 tbsp apricot jam
- 1 tsp white vinegar
- 2 cup milk (for syrup)
- 1 tsp vanilla essence
- 1 tbsp butter (for syrup)
- 0.25 cup sugar (for syrup)

Preheat your oven to 170°C (340°F). Grease a baking dish and set it aside.

In a large mixing bowl, combine the eggs, melted butter, sugar, apricot jam, and milk.

While mixing the wet ingredients, add the white vinegar and continue to stir until the mixture is smooth.

Add the flour, bicarbonate of soda, and baking powder to the bowl. Mix well until fully incorporated.

Pour the batter into the greased oven dish.

Bake in the preheated oven for 25-30 minutes.

While the pudding is baking, prepare the syrup. Add 2 cups milk, 1 tsp vanilla essence, 1 tbsp butter, and 1/4 cup sugar to a saucepan.

Simmer the syrup ingredients over medium heat for about 5 minutes.

Once the pudding is finished baking and still hot, poke holes across the entire surface using a fork.

Drizzle the warm syrup evenly over the sponge, allowing it to soak in.

Serve the pudding hot or chilled, ideally with vanilla custard.
