Weights are estimates. Together, the ingredients weigh about 345 g before cooking, which is about 20 g per serving.
Steps
Add the raw pistachios to a food processor or high-speed blender. Secure the lid and begin blending, stopping to scrape down the sides as needed.
Continue blending until the pistachios first become a dry powder, then a thick paste, and eventually a butter. This may take several minutes depending on the power of the machine; let the motor rest briefly if necessary to prevent overheating.
As soon as the pistachios reach the paste stage, drizzle in the coconut oil while the processor or blender is running. Continue blending until incorporated.
Add the powdered sugar, salt, and vanilla extract to the blender or food processor. Blend again until the mixture becomes as smooth and creamy as desired, scraping down the sides when necessary.
Taste the pistachio cream and add more powdered sugar if you prefer it sweeter. Blend briefly to incorporate any adjustment.
Transfer the pistachio cream to an airtight container. Refrigerate for up to 1 month. The finished spread will retain some crunch; for an especially smooth version, boil the pistachios for a few minutes and peel them before blending.
Notes
Store in an airtight container in the refrigerator for up to 1 month. The quick method produces a crunchy texture. For smoother pistachio cream, boil the pistachios for a few minutes and peel each one before blending. Serve on toast, fruit, biscuits, or in desserts.
