Ingredients
- 690 g all-purpose flour (For the no-sourdough option, use 840 g flour instead.)
- 245 g water (Use warm water if your house is cold. For the no-sourdough option, use 395 g water.)
- 300 g sourdough starter or discard (Omit for the no-sourdough option.)
- 18 g instant yeast
- 2 large eggs (For the dough.)
- 105 g honey (Sugar may be substituted.)
- 56 g salted butter (Softened; add after the initial mixing.)
- 2.5 tsp salt (For the dough.)
- 1 large egg (Optional egg wash.)
- 1 tbsp milk or cream (For the optional egg wash; cream with a splash of water is recommended by the author.)
- coarse sea salt (Optional finishing sprinkle, to taste.)
- 1 stick butter (Optional; rub over the hot rolls after baking, as mentioned in the video transcript.)
Steps
- 1
Add the flour, water, sourdough starter or discard, instant yeast, eggs, honey or sugar, and salt to the bowl of a stand mixer. Keep the softened butter out for later. For rolls without sourdough, use the alternative flour and water amounts listed in the ingredients.
- 2
Mix on low speed for 1–2 minutes, just until all of the flour has been absorbed.
- 3
Increase the mixer to medium-high or high speed and mix for about 10 minutes, until the dough is soft and smooth and is close to passing the windowpane test.
- 4
Add the softened butter and mix for a few more minutes, until it is fully incorporated. The finished dough should be smooth, strong, and slightly shiny.
- 5
Shape the dough into a ball in the mixing bowl, cover it, and let it rise until nearly doubled in size, about 1–2 hours or longer if the room is cold.
- 6
Divide the dough into 15–24 portions, depending on the desired size. For 15 XL rolls, portion the dough at about 105 g each; for 24 standard rolls, portion it at about 65 g each.
- 7
Shape each portion into a roll. To tighten and smooth the outer surface, cup your hands around the dough and pull the dough ball toward you several times, creating a smooth, round ball.
- 8
Arrange the shaped rolls on a parchment-lined baking sheet. Cover and let them rise for about 1 hour, until noticeably puffy. If the room is cold, place them in the oven with the light on to help them rise.
- 9
Toward the end of the second rise, preheat the oven to 375°F (190°C).
- 10
For the optional egg wash, whisk 1 egg with about 1 tablespoon of milk or cream until smooth and liquid.
- 11
Brush the egg wash over the risen buns, then sprinkle them with coarse sea salt.
- 12
Bake standard-size buns for about 15–18 minutes, until golden. Bake XL buns for about 25 minutes, or until the center reaches 190°F (88°C) on a thermometer.
- 13
If desired, rub a stick of butter over the hot baked rolls immediately after they come out of the oven.
Notes
The recipe makes either 15 XL rolls or 24 regular rolls. The transcript mentions serving the rolls with whipped honey butter, but no recipe or quantities for that accompaniment were provided. The source does not specify a storage or reheating method.
