Butter Garlic Prawn Udon-Style Noodles
Chewy, udon-style noodles made entirely from blended prawns, tossed in a creamy butter-garlic sauce with parsley and Parmesan. The shrimp noodles are quick to make and require no store-bought noodles or fresh garlic.

Ingredients
- 400 g Frozen prawns or shrimp (Thawed slightly if needed for blending; peeled and deveined)
- Salt (To taste, divided between the shrimp mixture and sauce)
- Black pepper (To taste, divided between the shrimp mixture and sauce)
- Paprika (To taste, divided between the shrimp mixture and sauce)
- 2 tbsp Cornflour (Cornstarch)
- 0.5 tbsp Sesame oil (For the shrimp noodle mixture)
- Water (Only if needed to blend; add 1 tbsp at a time if the mixture is too thick)
- 2 tbsp Butter (Estimated amount for sautéing the sauce)
- 2 tbsp Fresh cream (Heavy or whipping cream)
- Garlic granules (Add generously, to taste; the source recommends lots)
- Garlic powder (Optional, to taste)
- Onion powder (Optional, to taste)
- 2 tbsp Fresh parsley (Chopped)
- 2 tbsp Parmesan cheese (Finely grated; or add to taste)

Place the frozen prawns or shrimp in a blender. Add salt, black pepper, paprika, cornflour, and sesame oil.

Blend until the prawns form a smooth, thick paste. Do not add water unless the mixture is too thick for the blender to process; if needed, add water 1 tablespoon at a time until it can be blended, keeping the mixture as thick as possible.

Transfer the shrimp mixture to a piping bag. Bring a pot of water to a boil, then turn off the heat so the water is just boiled but no longer bubbling vigorously.

Pipe the shrimp mixture into the hot water in noodle-length strands. Work in batches if necessary so the strands have room to cook without sticking together.

Leave the shrimp noodles in the hot water until they float and become firm and slightly thickened. Remove them with a slotted spoon or drain them in a colander, then set aside.

Melt the butter in a large pan over medium heat. Add salt, black pepper, and paprika, plus garlic powder and onion powder if using. Stir briefly until the seasonings are fragrant.

Add the fresh cream to the seasoned butter and stir until the sauce is smooth and warmed through.

Add the cooked shrimp noodles to the pan. Toss gently until every noodle is coated in the creamy butter sauce and heated through.

Add a generous amount of garlic granules, the chopped parsley, and grated Parmesan. Toss once more until combined, then serve immediately.
