Ingredients

  • 0.5 cup granulated sugar (or 50g)
  • 0.25 cup water (or 25g)
  • 3 g baking soda (approximately 1/2 tsp)

    In a microwave-safe bowl, combine the granulated sugar and water.

    Gently swirl the bowl to combine the sugar and water. Do not stir with a spoon, as this can cause the sugar to crystallize.

    Microwave the mixture on high for 3 minutes.

    Continue microwaving in 10-second intervals, watching closely, until the sugar syrup turns a deep amber and gold color.

    Immediately pour the hot syrup into a separate bowl lined with parchment paper.

    Quickly add the baking soda to the syrup and stir vigorously with a chopstick.

    Watch the mixture grow and foam up. Do not touch it, as it is extremely hot.

    Let the candy cool completely until hardened, then smash it into pieces to enjoy.

Notes

Be extremely careful when handling the hot sugar syrup. Use a parchment-lined bowl to ensure the candy doesn't stick. This candy is excellent when crushed and used as a topping for Dalgona coffee or matcha lattes.
