Ingredients
- 3 Garlic (cloves)
- 2 Coriander root (cleaned)
- 1 tsp Coriander seeds
- 1 tsp Black pepper (whole peppercorns)
- 3 tbsp Oyster sauce
- 2 tbsp Thai palm sugar
- 2 tbsp White sugar
- 1 tbsp Seasoning sauce (Thai seasoning sauce (e.g., Maggi or Golden Mountain))
- 0.5 tsp MSG
- 1 tsp Turmeric powder
- 2 tsp Chicken stock powder (2 shakes)
- 1 tbsp Dark soy sauce (for color)
- 0.5 cup Evaporated milk (Unsweetened)
- 3 tbsp Wheat flour
- 400 g Chicken meat (boneless, to be minced or blended)

Prepare the aromatic base by pounding the garlic, coriander roots, coriander seeds, and black peppercorns together in a mortar and pestle until they form a smooth paste.

In a mixing bowl, combine 3 tbsp of oyster sauce, 2 tbsp of Thai palm sugar, and 2 tbsp of white sugar.

Add 1 tbsp of seasoning sauce, 0.5 tsp of MSG, 1 tsp of turmeric powder, and 2 shakes of chicken stock powder to the bowl.

Pour in 1 tbsp of dark soy sauce for color and 0.5 cup of evaporated milk. Stir the mixture until all ingredients are well combined and the sugar is fully dissolved.

Add 3 tbsp of wheat flour to the liquid mixture and whisk until smooth.

Place the 400 g of chicken meat in a blender or food processor along with the prepared spice paste and the liquid seasoning mixture. Blend until the texture is very fine and homogeneous.

Prepare skewers using bamboo sticks or chopsticks. Take a portion of the chicken paste and mold it around the top of the stick, flattening it slightly into a long, oval shape.

Place the prepared skewers in the freezer for approximately 2 hours until they are firm and frozen.

Once frozen, cook the chicken skewers in an air fryer or grill them until fully cooked and golden brown on the outside.
