Steps
Make taco seasoning
Make the taco seasoning by combining the red chili powder, garlic powder, onion powder, smoked paprika, dried oregano, black pepper, ground cumin, and salt in a bowl. Mix thoroughly and set aside.
Beef
Heat the clarified butter or oil in a pan over medium heat. Add the diced onion and sauté for about 1 minute, or until fragrant.
Add the ground beef to the pan. Cook over medium heat until the beef changes color.
Add the minced garlic and mix it into the beef.
Season the beef with 1 tablespoon of the taco seasoning, then add the tomato paste and roughly chopped chipotle peppers in adobo sauce. Mix well and sauté for 2–3 minutes.
Taste the beef and add additional salt if needed.
Pour in the warm water. Cook for 8–10 minutes, or until the beef is fully cooked and the water has evaporated.
Chipotle lime crema
Make the chipotle lime crema by combining the mayonnaise, sour cream, buttermilk or water, chopped chipotle peppers, taco seasoning, lime juice, and dried parsley in a bowl.
Mix the crema until it is creamy and smooth.
To assemble
Heat a small amount of oil in a pan over medium heat. Place one mini flour tortilla in the pan.
Add shredded mozzarella to the tortilla, then place some of the beef filling on one side.
Close the taco by flipping the empty half of the tortilla over the filling.
Cook until the tortilla is crispy and golden. Repeat with the remaining tortillas, cheese, and beef.
Serve the tacos warm with salsa and chipotle lime crema.
Notes
The source does not specify the exact amount of beef filling per tortilla, the precise frying time, or the amount of salsa. Adjust the chipotle peppers and taco seasoning to taste. The source says buttermilk or water for the crema.
