Ingredients

  • 300 g Pandan rice
  • 6 Eggs
  • 100 g Pre-cooked chicken breast (chicken breast fillet)
  • 200 g Chinese vegetables (stir-fry mix)
  • 2 tbsp Mirin (for the eggs)
  • 1 tbsp Sesame oil (for the eggs)
  • 0.5 tbsp Sugar (for the eggs)
  • 1 tsp Soy sauce (for the eggs)
  • 350 g Tomato frito (fried tomato sauce base)
  • 5 tbsp Ginger syrup (ginger syrup)
  • 2 tbsp Sweet chili sauce
  • 1 tbsp Vinegar (white vinegar)
  • 1 tsp Sambal (chili paste)
  • 1 tbsp Cornstarch (cornstarch)
  • 1 tbsp Sesame oil (for frying)
  • 1 tbsp Sunflower oil (for frying)
  • Krupuk or Cassava crackers (for garnish)
  • Atjar Tjampoer (pickled mixed vegetables for garnish)

Steps

    In a small saucepan, combine the tomato frito, ginger syrup, sweet chili sauce, vinegar, and sambal. Bring to a simmer over low heat and let it cook for 10 minutes.

    While the sauce is simmering, cook the pandan rice according to the package instructions.

    Prepare the egg mixture: crack 6 eggs into a bowl and add the mirin, 1 tablespoon of sesame oil, sugar, and soy sauce. Whisk briefly until light and airy, then set aside.

    In a large skillet or wok, heat 1 tablespoon of sesame oil and 1 tablespoon of sunflower oil over high heat. Add the pre-cooked chicken and Chinese vegetables, sautéing until the vegetables are tender and slightly translucent.

    Pour the egg mixture over the chicken and vegetables in the pan. Let it cook on high heat for 3-4 minutes.

    Flip the omelet over. It may break or look messy, but that is fine as it will be covered in sauce later.

    After the sauce has simmered for 10 minutes, stir in the cornstarch and continue to stir until the sauce thickens.

    Pour the thickened sauce over the omelet in the pan. Cover with a lid and let it simmer together for about 1 minute.

    Serve the Foe Yong Hai in deep plates alongside the pandan rice. Garnish with krupuk (or cassava crackers) and atjar tjampoer.

Notes

The omelet flip doesn't need to be perfect; a 'messy' omelet allows the sauce to better coat the ingredients. You can use any variety of Chinese stir-fry vegetable mix available at your local supermarket.
