Steps
In a small pot, boil the dried guajillo chiles, chiles de árbol, and tomatoes in water until softened, about 10-12 minutes.
While the chiles boil, heat the oil in a large skillet over medium-high heat. Add the cubed beef, season with salt and pepper, and cook until browned on all sides.
Add the cubed potatoes to the skillet with the beef and continue cooking for 5-7 minutes, until the potatoes begin to soften and brown slightly.
In a blender, combine the boiled chiles, tomatoes, garlic cloves, onion, and a splash of the cooking water. Blend until completely smooth.
Pour the blended chile sauce over the beef and potatoes in the skillet. If the sauce is too thick, add a little water or beef broth.
Stir in the beef bouillon, if using. Bring to a simmer, then reduce the heat to low.
Cover and cook for 15-20 minutes, or until the beef is tender and the potatoes are cooked through. Adjust the seasoning with salt, if needed, before serving.

The transcript provided was a song lyric and did not contain recipe data. This recipe was extracted from the visual cues in the video and the descriptive hashtags provided by the author. For a milder sauce, omit the chiles de árbol.
