Ingredients
- 2 Steaks (Use whatever steaks you wish; seasoned with salt and pepper)
- 1 tbsp Olive oil (For brushing steaks)
- 1 tbsp Butter (For basting steaks)
- 2 Garlic cloves (Minced; divided (some for basting steak, some for sauce))
- 1 Brown onion (Diced)
- 150 g Dried pasta
- 40 g Parmesan cheese (Grated)
- 80 ml Single cream
- 170 ml Vegetable stock
- Fresh parsley (Handful, chopped)
- 0.5 tsp Salt (For sauce)
- 0.5 tsp Black pepper (For sauce)
- 0.5 tsp Onion powder
- 0.5 tsp Italian seasoning
- 0.5 tsp Oregano
Steps
- 1
Season your steaks with salt and pepper and brush with a little olive oil.
- 2
Fry the steaks in a pan to your preferred liking. For a medium-rare finish, fry for 1 minute on each side, then add butter and a portion of the garlic to the pan and baste the steaks for another 30 seconds per side.
- 3
Remove the steaks from the pan and set aside to rest.
- 4
In the same pan, add the diced brown onion and cook until softened.
- 5
Add the remaining minced garlic cloves to the pan and cook for another 1 minute until fragrant.
- 6
Pour in the vegetable stock and single cream, bringing the mixture to a simmer.
- 7
Add the salt, black pepper, onion powder, Italian seasoning, oregano, and Parmesan cheese to the sauce. Stir to combine.
- 8
While the sauce simmers, cook the dried pasta in a separate pot of boiling salted water according to the package instructions.
- 9
A few minutes before the pasta is finished, add a handful of fresh chopped parsley to the sauce.
- 10
Once the pasta is ready, drain and add it directly to the sauce pan. Turn off the heat and toss to coat the pasta thoroughly.
- 11
Slice the rested steak into strips, place on top of the pasta, and serve.
Notes
The author suggests 1 minute per side followed by a 30-second garlic butter baste for the steak, but you should adjust this based on your preferred level of doneness and the thickness of the cut.
