Ingredients

  • 2 Small chickens (Cut or butterflied for grilling; about 1.2 kg in total)
  • Salt (To taste, for seasoning the chicken)
  • 2 tbsp Olive oil (For seasoning the chicken)
  • Chili (To taste; can be hot sauce or piri-piri)
  • 0.5 limão Lemon juice (Juice of half a lemon)
  • 4 dentes Crushed garlic (For seasoning the chicken)
  • 2 tbsp Oil (For preparing the sauce)
  • 2 tbsp Vinegar (For the sauce)
  • 1 tbsp Whisky (For the sauce)
  • Salt (A small amount, for the sauce)
  • Chili (To taste, for the sauce)
  • 1 tsp Honey (A drizzle of honey)
  • 2 dentes Chopped garlic (Added to the sauce after it boils)
  • 1 tsp Oregano (To finish the sauce)
  • 2 Bay leaves (To flavor the sauce)

Steps

  1. 1

Season the small chickens with salt, olive oil, chili to taste, the juice of half a lemon, and the crushed garlic cloves. Toss very well so the seasoning coats all the meat, then set aside for a few minutes.

  2. 2

Heat a grill or barbecue to medium-high heat. Place the chickens on the grill and cook until they begin to brown.

  3. 3

Turn the chickens every 5 minutes, ensuring they cook evenly and become well browned on both sides. Continue for about 30 minutes, until the meat is fully cooked and reaches 74 °C in the center of the thickest part.

  4. 4

While the chicken is grilling, place a small saucepan over medium heat and add the oil, vinegar, and whisky.

  5. 5

Season the liquid with a little salt, chili to taste, and a drizzle of honey. Let it boil briefly so the alcohol evaporates and the flavors combine.

  6. 6

Remove the saucepan from the heat. Add the chopped garlic, oregano, and bay leaves, stir well, and set the sauce aside.

  7. 7

When the chickens are golden and cooked through, brush them with some of the still-aromatic sauce.

  8. 8

Transfer the chicken to a cutting board and cut it into small, serving-size pieces.

  9. 9

Arrange the pieces on a platter or serving plate and generously brush them with the remaining sauce. Serve immediately.

Notes

The exact quantities were not provided in the audio; they were estimated for about 4 servings. Adjust the chili to your taste. Serve with bread, French fries, or salad to make the most of the sauce.
