Small chickens grilled until golden, seasoned with lemon, garlic, olive oil, and chili. They are finished with a hot sauce made with vinegar, whisky, honey, garlic, oregano, and bay leaves.

Ingredients
- 2 Small chickens (Cut or butterflied for grilling; about 1.2 kg in total)

- 1 tsp Oregano (To finish the sauce)
- 2 Bay leaves (To flavor the sauce)

Season the small chickens with salt, olive oil, chili to taste, the juice of half a lemon, and the crushed garlic cloves. Toss very well so the seasoning coats all the meat, then set aside for a few minutes.

Heat a grill or barbecue to medium-high heat. Place the chickens on the grill and cook until they begin to brown.

Turn the chickens every 5 minutes, ensuring they cook evenly and become well browned on both sides. Continue for about 30 minutes, until the meat is fully cooked and reaches 74 °C in the center of the thickest part.

While the chicken is grilling, place a small saucepan over medium heat and add the oil, vinegar, and whisky.

Season the liquid with a little salt, chili to taste, and a drizzle of honey. Let it boil briefly so the alcohol evaporates and the flavors combine.

Remove the saucepan from the heat. Add the chopped garlic, oregano, and bay leaves, stir well, and set the sauce aside.

When the chickens are golden and cooked through, brush them with some of the still-aromatic sauce.

Transfer the chicken to a cutting board and cut it into small, serving-size pieces.

Arrange the pieces on a platter or serving plate and generously brush them with the remaining sauce. Serve immediately.
