Italian-Style Summer Tomato Salad with Burrata
A light summer salad made with assorted varieties of ripe tomatoes, creamy burrata, and a sweet-and-sour dressing of olive oil, balsamic vinegar, and honey. Fresh basil and shallot add aroma and flavor.

Ingredients
- 500 g Summer tomatoes, assorted varieties (Fairly ripe; sliced.)
- 3 tbsp Olive oil (A few tablespoons, for the dressing.)
- 1 tbsp Balsamic vinegar (Either a thick balsamic glaze or regular, thinner balsamic vinegar may be used.)
- 1 tbsp Honey (If using thin balsamic vinegar, add a little more to taste.)
- 10 g Fresh basil (Chopped or torn into smaller pieces.)
- 40 g Shallot (Finely chopped.)
- Salt (To taste.)
- Black pepper (Freshly ground, to taste.)
- 150 g Burrata (Removed from the refrigerator about 30 minutes beforehand.)

Remove the burrata from the refrigerator about 30 minutes before serving so it can reach room temperature and develop a creamier texture.

In a small bowl, combine the olive oil, balsamic vinegar, and honey. Whisk vigorously with a whisk or fork until the dressing is smooth.

Add the chopped shallot and basil to the dressing. Season with salt and freshly ground black pepper, then stir.

Taste the dressing. If using thin balsamic vinegar, add more honey to achieve a pleasant balance of sweetness and acidity.

Wash and dry the tomatoes. Slice them into pieces of similar thickness and arrange them on a large plate or shallow serving platter.

Drizzle the prepared dressing over the tomato slices and gently toss them in the dressing so they are evenly seasoned without breaking apart.

Arrange the burrata on top of the tomatoes. You can leave it whole or gently tear it open so the creamy center spills over the salad.

Serve immediately, preferably with extra basil and bread for mopping up the dressing.
Notes
