Ingredients

  • 500 g parsnips (peeled and chopped)
  • 1 kg potatoes (peeled and chopped)
  • 1 large onion (diced finely)
  • 1000 ml vegetable or chicken stock (prepared with 4 stock cubes)
  • 1 knob salted butter (plus an extra knob for sautéing)
  • 1 drizzle vegetable oil (for sautéing)
  • 2 tbsp curry powder (heaped; use hot for spice or mild for children)
  • 150 ml double cream
  • salt (to taste)
  • black pepper (to taste)
  • fresh parsley (to garnish)

Steps

    In a large pot, heat a drizzle of oil and a knob of salted butter over medium heat.

    Add the finely diced onion to the pot, season with salt and pepper, and sauté until soft and translucent.

    Add the chopped parsnips and potatoes to the pot with the onions.

    Stir in 2 heaped tablespoons of curry powder, then pour in the 1000ml of hot vegetable or chicken stock.

    Bring the mixture to a boil, then lower the heat to a simmer.

    Cover the pot with a lid and simmer until the vegetables are completely tender.

    Using an immersion blender, blend the soup directly in the pot until perfectly smooth.

    Stir in the double cream and taste for seasoning, adding more salt or pepper if needed.

Notes
