Aromatic, strong South Indian filter coffee made by brewing roasted coffee grounds into a concentrated decoction, then combining it with hot milk and sugar. Traditionally served frothy in a tumbler and davara.

Ingredients

  • 2 tbsp South Indian filter coffee powder (Preferably a blend of coffee and chicory)
  • 1 cup Boiling water (For brewing the coffee decoction)
  • 1 cup Whole milk (Hot)
  • 2 tsp Granulated sugar (Adjust to taste)

Steps

    Heat the water until fully boiling. Measure the coffee powder into the upper chamber of a South Indian coffee filter and gently level it without packing it tightly.

    Pour the boiling water slowly over the coffee powder, filling the upper chamber. Fit the lid and allow the liquid to drip through into the lower chamber for about 8–10 minutes, until a dark, concentrated decoction forms.

    While the decoction brews, heat the milk in a small saucepan over medium heat until steaming hot, taking care not to scorch or boil it over.

    Add the sugar to two heatproof serving tumblers or cups.

    Pour about half of the strong coffee decoction into each serving vessel over the sugar.

    Add the hot milk to each vessel and stir until the sugar dissolves and the coffee and milk are evenly combined.

    For the traditional frothy texture, pour the coffee back and forth between a tumbler and davara, or between two heatproof cups, from a short height several times. Serve immediately while hot.
