Flourless Protein Quinoa and Beet Crêpes
Thin, soft, and flexible crêpes made with soaked quinoa, cooked beet, and egg, without flour. They are suitable for both sweet and savory fillings.

Ingredients
- 100 g Quinoa (Rinse and soak overnight; the indicated weight is uncooked.)
- 60 g Cooked beet
- 1 Egg (Medium to large.)
- 1 cucchiaio Oil (Optionally use a few drops to grease the pan as well.)
- Salt (A pinch, to taste.)
- 1 cucchiaino Sugar (Approximately 4 g.)
- 140 ml Water (Approximately 140 ml; adjust the amount according to the consistency of the batter.)

Rinse the quinoa thoroughly under cold running water to remove any bitter residue. Transfer it to a bowl, cover it with water, and soak overnight, for approximately 8-12 hours.

The following day, drain the quinoa and rinse it again. Let it drain well so the batter does not become excessively watery.

Place the soaked quinoa, cooked beet, egg, oil, salt, sugar, and approximately 140 ml of water in a blender.

Blend until completely smooth and uniform, with no noticeable quinoa grains. If the batter is too thick to pour and spread, add a little water at a time; if it is too thin, let it rest briefly before cooking.

Heat a nonstick pan over medium heat. You can use it without additional oil, or add a few drops of oil and spread it evenly with a piece of paper towel.

Pour a small amount of batter into the pan at a time and quickly tilt the pan to spread it into a thin layer, forming a crêpe.

Cook until the surface appears set and the side in contact with the pan is nicely golden. Do not flip the crêpe too soon: it should release easily from the pan to prevent it from breaking.

Carefully flip the crêpe with a spatula and cook the other side until golden. Repeat with the remaining batter, greasing the pan again only if necessary.

Serve the crêpes hot or warm and fill them as desired. For a savory version, cottage cheese, Greek yogurt, salmon, or chicken are suitable; for a sweet version, choose a filling to suit your taste.
Notes
The amount of water is approximate and should be adjusted according to the consistency. The crêpes can be filled with either sweet or savory ingredients. The quinoa requires overnight soaking before preparation.
