Ingredients

  • 3 potatoes (peeled and boiled)
  • 3 tbsp potato starch (potato starch)
  • 60 g mozzarella (mozzarella cheese for stuffing)
  • 2 tbsp soy sauce (soy sauce)
  • 1 tbsp sugar (sugar)
  • 1 tbsp mirin
  • 1 tsp potato starch (for the sauce)
  • 2 tbsp water (water)

Steps

  1. 1

Peel and boil the potatoes until tender, then mash them thoroughly in a bowl.

  2. 2

Add the potato starch to the mashed potatoes and mix until a smooth, dough-like consistency is formed.

  3. 3

Take a small portion of the potato mixture, flatten it, and place a piece of mozzarella in the center.

  4. 4

Fold the potato dough around the cheese and shape it into a small, flat round patty.

  5. 5

In a pan with a little oil, fry the patties on both sides until they are golden brown and the cheese inside has melted.

  6. 6

In a small saucepan or bowl, combine the soy sauce, sugar, mirin, water, and a little potato starch.

  7. 7

Heat the sauce mixture until it thickens into a glossy glaze.

  8. 8

Pour the sauce over the fried mochi or toss them in the pan with the sauce to coat evenly before serving.

Notes

These are inspired by the snacks seen in the anime Demon Slayer. Ensure the potato mash is very smooth for the best texture.
