Ingredients
- 1 carrot (large, grated)
- 0.5 cup oil
- 1.5 cup sugar
- 3 eggs
- 2 cup self-rising flour (Or use all-purpose flour and add 1 tbsp baking powder; do not blend the flour.)
- 4 tbsp cocoa powder (For the dairy-free chocolate glaze.)
- 6 tbsp sugar (For the dairy-free chocolate glaze.)
- 1 tbsp oil (For the dairy-free chocolate glaze.)
- 0.5 cup water (For the dairy-free chocolate glaze.)
Steps
- 1
Place the grated carrot, oil, sugar, and eggs in a blender. Blend until the carrot is completely puréed.
- 2
Pour the blender mixture into a bowl. Add the flour gently and mix well with a spatula; do not blend the flour.
- 3
Transfer the batter to a greased 25 cm round tube pan.
- 4
Bake in a preheated oven at 200 °C for about 35 minutes, or until fully baked. Insert a toothpick to check for doneness.
- 5
Let the cake cool and remove it from the pan.
- 6
For the optional glaze, combine the cocoa powder, sugar, oil, and water in a saucepan.
- 7
Place the saucepan over heat and cook until the glaze thickens slightly.
- 8
Wait until the glaze is lukewarm, then pour it over the cake.
Notes
The chocolate glaze is optional. The article states that the cake contains no milk and is therefore lactose-free; it does not provide instructions for greasing the pan or specify how to do so.
