Ingredients
- 850 g Heavy cream (Must be very cold and have a high fat content)
Steps
- 1
Ensure the heavy cream is very cold before starting.
- 2
Pour the heavy cream into a bowl and begin to whip continuously.
- 3
Continue whipping the cream past the stiff peak stage until the mixture 'breaks' and the solid fat begins to separate from the liquid (buttermilk).
- 4
Continue whipping until the fat clumps together completely and is clearly separated from the buttermilk.
- 5
Drain the buttermilk and reserve it for other preparations such as cakes or pancakes.
- 6
Let the solid butter drain for a few additional minutes to remove any remaining buttermilk.
- 7
Pack the butter into a clean container and refrigerate.
Notes
From 850g of heavy cream, you get approximately 350g of butter. The leftover liquid is real buttermilk, excellent for baking. The higher the fat content of the cream, the higher the yield.
