Ingredients
- 2 lb chicken wings (tips removed, separated into drumettes and flats)
- 4 cup water (for brine)
- 2 tbsp salt (for brine)
- 1 tsp MSG (optional, for brine (Accent brand))
- 2 cup all-purpose flour (divided for double breading)
- 2 tsp salt (for breading)
- 0.5 tsp black pepper
- 0.75 tsp MSG (for breading)
- 1 egg (beaten)
- 1 cup milk
- vegetable oil (for deep frying)
- 1 cup honey BBQ sauce (store-bought or homemade)
Steps
- 1
In a large bowl, combine 4 cups of water, 2 tablespoons of salt, and 1 teaspoon of MSG. Stir until dissolved.
- 2
Add the chicken wings to the brine, cover, and refrigerate for at least 12 hours (or overnight).
- 3
Preheat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
- 4
In a medium bowl, whisk together the egg and milk to create a wash.
- 5
In a separate shallow bowl, combine the flour, 2 teaspoons of salt, black pepper, and 3/4 teaspoon of MSG.
- 6
Remove the chicken from the brine and pat dry with paper towels.
- 7
Working in batches, coat each wing piece in the flour mixture, then dip into the egg wash, and then coat again in the flour mixture for a double breading.
- 8
Fry the wings in the hot oil for 12 to 15 minutes until golden brown and cooked through. Do not overcrowd the fryer.
- 9
Drain the fried wings on a wire rack or paper towels.
- 10
In a large bowl, toss the warm fried wings with the honey BBQ sauce until thoroughly coated. Serve immediately.
Notes
KFC uses small chickens which cook faster. If your wings are large, ensure they reach an internal temperature of 165°F. You can keep finished wings warm in a 300°F oven while frying remaining batches.
