Ingredients

  • 500 g milk or dark chocolate (chopped; use good-quality melting chocolate)
  • 2 packets Tim Tam biscuits (roughly chopped; approximately 20 biscuits total)
  • 150 g marshmallows (halved if large)
  • 100 g mixed nuts (roughly chopped; optional but typical in rocky road)
  • 100 g jelly candies (chopped or left whole, according to size; optional typical rocky-road addition)

    Line a square baking tin, approximately 20 cm (8 inches), with baking paper, leaving some paper overhanging the sides for easy removal.

    Roughly chop the Tim Tam biscuits into bite-size pieces. If using large marshmallows, cut them in half, and chop the mixed nuts and jelly candies if needed.

    Melt the chopped chocolate in a heatproof bowl set over a saucepan of gently simmering water, or microwave it in short bursts, stirring between each burst. Stop heating as soon as the chocolate is smooth and fully melted; do not let water contact the chocolate.

    Add the chopped Tim Tams, marshmallows, mixed nuts, and jelly candies to the melted chocolate. Fold gently until the pieces are evenly coated, taking care not to crush the biscuits or melt the marshmallows completely.
