Ingredients

  • 1.5 lb boneless, skinless chicken thighs (Finely minced)
  • 1 lb boneless, skinless chicken breast (Finely minced)
  • salt (To taste, for kebabs)
  • 1 tsp black pepper
  • garlic cloves (5-6 cloves, finely minced)
  • 1 tbsp fresh parsley (Minced)
  • 1 onion (1 medium onion, finely chopped; squeeze out excess water)
  • green chilies (2-4 chilies, finely chopped)
  • 1 tbsp red chili flakes
  • 1 tsp red chili powder
  • paprika (Named in the method but no quantity provided)
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp ground cumin seeds
  • 1 tbsp ground coriander seeds
  • oil (For lightly greasing hands and for frying)
  • 1 red onion (Large, diced; for Shirazi salad)
  • 2 tomatoes (Medium, diced; for Shirazi salad)
  • 1 cucumber (Large, peeled and diced; for Shirazi salad)
  • 2 tbsp lemon juice (Freshly squeezed)
  • 0.25 cup fresh mint (Chopped)
  • 0.25 cup fresh parsley (Chopped; for Shirazi salad)
  • salt (To taste, for Shirazi salad)
  • 2 tbsp extra-virgin olive oil (For Shirazi salad)
  • 1 tsp ground sumac (For Shirazi salad)

Steps

  1. 1

In a large mixing bowl, combine the minced chicken thighs and breast with salt, black pepper, paprika, minced garlic, minced parsley, squeezed-dry onion, green chilies, red chili flakes, red chili powder, garlic powder, onion powder, ground cumin seeds, and ground coriander seeds.

  2. 2

Mix the chicken mixture thoroughly for 8-10 minutes, until it becomes sticky. Ensure the chicken mince and onions contain no excess water, since excess moisture can cause the kebabs to break apart.

  3. 3

Cover and refrigerate the kebab mixture for 2 hours.

  4. 4

Prepare the Shirazi salad by combining the diced red onion, diced tomatoes, peeled diced cucumber, lemon juice, chopped mint, chopped parsley, salt, extra-virgin olive oil, and ground sumac.

  5. 5

After chilling, lightly grease your hands with oil to prevent sticking. Shape the chicken mixture into long kebabs on skewers.

  6. 6

Cook the skewered kebabs on a grill or pan-fry them over medium heat for 8-10 minutes, flipping them during cooking so they cook on both sides.

  7. 7

Serve the minced chicken kebabs with the Shirazi salad, Persian saffron cranberry rice, and garlic sauce.

Notes

The source mentions Persian saffron cranberry rice and garlic sauce as accompaniments but does not provide their recipes. The method names paprika, but no quantity appears in the ingredient list. Grill or pan-fry method is given, but no exact grill or pan temperature is specified beyond medium heat for pan-frying.
