Ingredients
- 150 g bacon lardons
- 1 onion (finely diced)
- 2 peppers (finely chopped)
- 100 g tenderstem broccoli (finely chopped)
- 2 garlic cloves (grated)
- 1 tbsp tomato purée
- 1 tbsp white wine vinegar (Alternatively, use 50 ml white wine.)
- 3 tbsp plain flour
- 800 ml chicken stock
- 200 ml semi-skimmed milk
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1 tsp dried chives
- 500 g gnocchi
- 350 g cooked chicken (Shredded or diced. If no leftover cooked chicken is available, cook 500 g raw chicken breast before starting, then shred or dice it. It may be cooked in an air fryer or diced and cooked in the pan first, then removed before adding the bacon.)
- salt (To taste)
- black pepper (To taste)
- crusty bread (For dipping; not included in the stated macros.)
Steps
- 1
Add the bacon lardons, diced onion, chopped peppers, and finely chopped tenderstem broccoli to a large pan over medium heat. Cook, stirring regularly, until the bacon is cooked through and the vegetables are soft and tender.
- 2
Add the grated garlic, tomato purée, and either the white wine vinegar or white wine. Cook everything together for 1 minute.
- 3
Add the plain flour, stir well, and cook for about 1 minute to cook the flour off.
- 4
Gradually pour in the chicken stock and semi-skimmed milk a little at a time, stirring continuously until the mixture is combined and smooth with no lumps.
- 5
Add the dried parsley, dried oregano, and dried chives, then stir well.
- 6
Add the gnocchi and cooked shredded or diced chicken.
- 7
Bring the soup to a gentle simmer. Cook for about 5–7 minutes, stirring occasionally, until the gnocchi is tender and the soup has thickened.
- 8
Season to taste with salt and black pepper.
- 9
Spoon the soup into bowls and serve with plenty of crusty bread for dipping.
