Ingredients
- 1.5 cup unfiltered apple cider (Reduced to ¾ cup before adding to the batter)
- 0.5 cup packed light brown sugar
- 0.5 cup granulated sugar (For the bread)
- 0.5 cup unsalted butter (Melted; for the bread)
- 2 large eggs (Room temperature)
- 2 tsp vanilla extract
- 2 cup all-purpose flour
- 1.5 tsp baking powder
- 0.5 tsp salt
- 0.75 tsp ground cinnamon (For the bread)
- 0.25 tsp ground nutmeg or allspice (Use either ground nutmeg or ground allspice)
- 0.25 cup granulated sugar (For the coating)
- 0.5 tsp ground cinnamon (For the coating)
- 2 tbsp unsalted butter (Melted; for coating the loaf)
- baking spray (For the loaf pan)
Steps
- 1
Place the apple cider in a small saucepan over medium-high heat and bring it to a boil. Continue boiling until it is reduced to ¾ cup, about 15 minutes, concentrating the cider flavor.
- 2
Transfer the reduced cider to a medium heat-proof mixing bowl and let it cool to room temperature.
- 3
Preheat the oven to 350°F (175°C). Lightly spray an 8½×4½-inch loaf pan with baking spray and set it aside.
- 4
In a large bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg or allspice.
- 5
Once the cider has cooled, add the brown sugar, granulated sugar, melted butter, eggs, and vanilla to the cider bowl. Whisk until well combined.
- 6
Pour the cider mixture into the flour mixture and stir until fully combined. Transfer the batter to the prepared loaf pan.
- 7
Bake for 50 minutes, or until a toothpick inserted into the center comes out with a few crumbs attached.
- 8
Let the bread cool in the pan for 10 minutes. Carefully invert it onto a wire rack and let it cool for another 10 minutes.
- 9
In a small bowl, stir together the coating sugar and cinnamon until evenly combined.
- 10
Place the warm loaf on the wire rack over parchment or wax paper. Brush one side of the loaf with melted butter.
- 11
Sprinkle cinnamon sugar over the buttered area. Continue brushing one section at a time and sprinkling it with cinnamon sugar until the entire loaf is coated. Gather excess sugar from the parchment as needed to replenish the coating.
- 12
Let the bread finish cooling, or slice and serve it while still warm.
Notes
Unfiltered apple cider gives the best flavor; Simply Apple fresh-pressed apple juice is a tested substitute. The reduced cider can be refrigerated for up to 5 days. Coat the loaf while it is still warm so the butter remains soft and the sugar sticks well. Store in an airtight container at room temperature for up to 5 days. The whole loaf or individual slices can be wrapped and frozen for a few months.
