Ingredients

  • 200 g carrots (cut in pieces (2 cm))
  • 200 g red peppers (cut in pieces (3 cm))
  • 200 g broccoli (florets and stems sliced (5 mm))
  • 150 g apples (cored and quartered)
  • 30 g sunflower seeds
  • 25 g olive oil
  • 20 g lemon juice (freshly squeezed)
  • 1 tsp honey (or agave syrup)
  • 1.5 tsp Dijon mustard
  • 1 tsp fine sea salt
  • 0.25 tsp ground black pepper

Steps

  1. 1

Place the carrots (200 g), red peppers (200 g), broccoli (200 g), and apples (150 g) into the Thermomix mixing bowl.

  2. 2

Add the sunflower seeds (30 g), olive oil (25 g), lemon juice (20 g), honey (1 tsp), Dijon mustard (1 ½ tsp), sea salt (1 tsp), and black pepper (¼ tsp).

  3. 3

Chop for 5 seconds at Speed 4 or until the desired consistency is reached.

Notes

Agave syrup can be used as a substitute for honey. Ensure vegetables are cut to the specified sizes (2-3 cm) before adding to the Thermomix to ensure an even chop.
