- 0.5 tsp Aleppo pepper (Or red pepper flakes; for the sauce)
- 1 tbsp lemon juice (For the sauce)
- 1 tsp olive oil (For the sauce)
- salt (A pinch; for the sauce)
- 1 cup cherry tomatoes (Quartered; for the salad)
- 0.125 white onion (Thinly sliced; for the salad)
- 2 tbsp fresh parsley (For the salad)
- 1 tsp sumac (For the salad)
- 1 tbsp lemon juice (For the salad)
- salt and black pepper (To taste; for the salad)
- rice (For serving; regular rice, brown rice, or high-protein, low-carb Kaizen rice may be used)
Steps
- 1
Preheat the oven to 425 °F (220 °C).
- 2
Process the onion, four garlic cloves, red pepper, and parsley in a small food processor until finely chopped.
- 3
Place the ground chicken in a large bowl and add the processed vegetable mixture.
- 4
Add the tomato paste, sumac, Aleppo pepper, smoked paprika, cumin, turmeric, salt, and pepper. Drizzle with the tablespoon of olive oil.
- 5
Mix very well until all the ingredients are evenly incorporated.
- 6
Transfer the mixture to a baking sheet and spread it evenly.
- 7
Smooth the edges. Using a knife or spatula, cut vertical lines to form individual skewers, leaving a little space between them. Make small indentations across the surface with the back of the spatula.
- 8
Bake for 18–20 minutes.
- 9
Move the baking sheet to the top rack and broil for 2–3 minutes, until the surface is browned.
- 10
To prepare the smoked sauce, mix the Greek yogurt, grated garlic, smoked paprika, Aleppo pepper, lemon juice, olive oil, and a pinch of salt.
- 11
To prepare the tomato salad, combine the quartered cherry tomatoes, thinly sliced white onion, parsley, sumac, lemon juice, salt, and black pepper. Mix well and let stand for a few minutes.
- 12
Serve the skewers over regular rice, brown rice, or Kaizen rice, accompanied by the smoked yogurt sauce and tomato salad.
