Ingredients
- 3 cup cold cooked rice, preferably from the day before
- 2 large yellow onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 1 tsp soy sauce
- 0.5 tsp dried thyme
- 0.5 cup beef or vegetable broth (Use beef or vegetable broth.)
- 0.5 cup shredded Gruyère or mozzarella cheese (Optional; Gruyère or mozzarella may be used.)
- 2 tbsp fresh parsley, chopped
- salt (To taste.)
- black pepper (To taste.)
Steps
- 1
Heat the butter and olive oil in a large skillet over medium-low heat.
- 2
Add the sliced onions and cook for 15 to 20 minutes, stirring frequently, until soft and deeply golden brown.
- 3
Stir in the minced garlic and thyme. Cook for about 30 seconds, until fragrant.
- 4
Add the Worcestershire sauce and soy sauce; stir to coat the onions.
- 5
Add the cold rice and break up any clumps with a spoon. Stir-fry for 3 to 5 minutes, until hot and lightly toasted.
- 6
Pour in the broth and stir well. Cook for 2 to 3 more minutes, until most of the liquid has been absorbed.
- 7
Season with salt and black pepper to taste.
- 8
If using cheese, sprinkle it over the rice and cover the skillet for 1 to 2 minutes, until melted.
- 9
Garnish with fresh parsley and serve hot.
