Ingredients
- 8 potatoes (Medium, peeled)
- 1 tsp salt (Plus extra for boiling the potatoes)
- 2 tsp chicken bouillon powder
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp smoked paprika (For the potato mixture)
- 2 eggs (For the potato mixture)
- 1 cup shredded mozzarella
- 0.75 cup grated Parmesan
- 1 cup mozzarella (Cut into small cubes for filling)
- 1 cup plain flour (For coating)
- 2 eggs (Beaten, for coating)
- 2 cups crushed cornflakes (Or breadcrumbs)
- oil (For deep-frying)
- 0.5 cup mayonnaise (For the spicy mayo)
- 1 tbsp sriracha
- 0.5 tsp smoked paprika (For the spicy mayo)
- 0.5 tsp garlic powder (For the spicy mayo)
- 0.5 tsp onion powder (For the spicy mayo)
- 0.5 tsp dried parsley (For the spicy mayo)
Steps
- 1
Boil the peeled potatoes in generously salted water until fork-tender. Drain them well, then mash until completely smooth.
- 2
Add the measured salt, chicken bouillon powder, onion powder, garlic powder, smoked paprika, eggs, shredded mozzarella, and grated Parmesan to the mashed potatoes. Mix until fully combined.
- 3
Refrigerate the potato mixture for 30 minutes so it firms up.
- 4
Scoop out portions of the chilled potato mixture and flatten each portion slightly in your hand.
- 5
Place a cube of mozzarella in the center of each flattened portion. Seal the potato mixture around the cheese and roll it into a smooth ball.
- 6
Freeze the formed potato balls for 1 hour, or until firm.
- 7
Coat each potato ball in the plain flour.
- 8
Dip each floured ball into the beaten eggs.
- 9
Coat each egg-dipped ball thoroughly with the crushed cornflakes or breadcrumbs.
- 10
Heat the frying oil to 180°C (350°F). Deep-fry the coated potato balls for 3–4 minutes, until golden brown and crispy and the cheese inside is melted.
- 11
Meanwhile, whisk the mayonnaise, sriracha, smoked paprika, garlic powder, onion powder, and dried parsley together until smooth.
- 12
Serve the potato cheese balls immediately while hot, with the spicy mayo for dipping.
