Ingredients

  • 180 g Greek yoghurt
  • 1 tsp vanilla extract
  • 1 tsp maple syrup (Optional.)
  • 2 Weetabix
  • 1 shot espresso (Alternative: 1 tsp instant coffee dissolved in 50 ml boiling water.)
  • 100 ml milk
  • 1 tsp cocoa powder (May be swapped for grated chocolate.)

Steps

  1. 1

Mix the Greek yoghurt, vanilla extract, and maple syrup, if using, in a bowl. Set the mixture aside.

  2. 2

Crush the Weetabix into a container. Pour over the espresso and milk. For the instant-coffee alternative, dissolve 1 tsp instant coffee in 50 ml boiling water; sweeten the coffee to taste before pouring if desired.

  3. 3

Continue crushing the Weetabix with a fork while mixing in the liquid. Once mashed and combined, press it down into an even layer.

  4. 4

Spoon the yoghurt mixture over the Weetabix and smooth it into an even layer.

  5. 5

Dust the top with cocoa powder or grated chocolate.

  6. 6

Cover the container with a lid and refrigerate overnight. Eat the next morning.

Notes

The source does not specify the type of milk or a quantity for the grated-chocolate alternative. Sweetening the coffee is optional and the amount is to taste.
