Ingredients
- 3 tbsp extra-virgin olive oil (Divided)
- 16 fresh sage leaves
- 2 tbsp prosciutto (Coarsely chopped)
- 1 medium shallot (Minced)
- 2 cloves garlic (Minced)
- 0.75 cup heavy cream
- 0.25 cup Grana Padano cheese (Grated, plus more for serving)
- 0.5 tsp ground pepper
- 0.125 tsp salt
- 1 lb whole-wheat gnocchi
- 1 tsp truffle oil
Steps
- 1
Put a large pot of water on to boil.
- 2
Meanwhile, heat 2 tablespoons of the olive oil in a medium skillet over medium heat.
- 3
Add the sage leaves and cook until crispy, 2 to 4 seconds per side.
- 4
Leaving the oil in the skillet, transfer the crispy sage to a paper-towel-lined plate.
- 5
Add the chopped prosciutto to the skillet and cook, stirring occasionally, until crispy, 1 to 2 minutes.
- 6
Leaving the oil in the skillet, transfer the crispy prosciutto to the plate with the sage. Set both aside.
- 7
Add the remaining 1 tablespoon of olive oil to the skillet.
- 8
Add the minced shallot and garlic. Cook, stirring often, until translucent, 30 to 60 seconds.
- 9
Add the heavy cream and bring it to a boil.
- 10
Adjust the heat to maintain a lively simmer. Cook, stirring frequently to prevent burning, until the cream is reduced by half, 4 to 5 minutes.
- 11
Whisk in the grated Grana Padano, ground pepper, and salt.
- 12
Remove the skillet from the heat and cover it to keep the sauce warm.
- 13
Cook the gnocchi in the boiling water until it floats to the surface, about 3 minutes.
- 14
Using a slotted spoon or sieve, scoop out the gnocchi and add it to the warm sauce along with the truffle oil.
- 15
Stir gently until the gnocchi is coated in the sauce.
- 16
Top with the reserved crispy sage and prosciutto. Add more grated Grana Padano, if desired.
Notes
The source's final direction refers to the topping as pancetta, but the authoritative ingredient list specifies prosciutto; prosciutto is used here. Truffle oil is commonly found near other flavored oils in well-stocked supermarkets.
