Ingredients

  • 1 lb boneless, skinless chicken breast (Boiled and shredded)
  • 6 large potatoes (Boiled)
  • 0.5 cup carrots (Finely diced and boiled)
  • 0.5 cup bell pepper (Finely chopped)
  • 0.5 cup green onion (Finely chopped)
  • 1 cup mozzarella cheese (Shredded)
  • 1 large egg
  • 3 tbsp cornstarch
  • salt (To taste)
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp chicken powder
  • 2.5 Serrano peppers (Finely chopped; use 2–3 peppers; optional)
  • 1 tbsp fresh parsley (Chopped)
  • 1 cup bread crumbs (For coating)
  • 0.5 cup all-purpose flour (For coating slurry)
  • 0.333 cup water (Mix with flour to make a thick slurry)
  • oil (For frying; use cooking-oil spray if air frying)

Steps

  1. 1

In a large bowl, combine the boiled potatoes, shredded boiled chicken, boiled diced carrots, optional chopped Serrano peppers, chopped bell pepper, chopped green onion, egg, cornstarch, salt, black pepper, garlic powder, chicken powder, and shredded mozzarella. Mix until the mixture is well combined and sticky.

  2. 2

In a separate bowl, mix the all-purpose flour and water until they form a thick paste or slurry.

  3. 3

Place the bread crumbs in another bowl.

  4. 4

Shape the potato-and-chicken mixture into doughnuts and place them on a tray.

  5. 5

Freeze the shaped doughnuts for 30 minutes.

  6. 6

Coat each doughnut in the flour slurry, then coat it in the bread crumbs.

  7. 7

At this point, freeze the coated doughnuts for later use if desired.

  8. 8

For pan-frying, heat oil in a pan over medium heat. Add the coated doughnuts without overcrowding the pan.

  9. 9

Fry the doughnuts for 2–3 minutes, flipping them to cook both sides, until golden brown and crispy.

  10. 10

For air frying, lightly spray the coated doughnuts with cooking oil and air-fry at 400°F (200°C) for 10 minutes, flipping halfway through.

Notes

The source lists fresh parsley but does not specify when to add it; it may be mixed into the potato-and-chicken mixture. The source gives no quantity for frying oil. Pan-frying and air-frying are alternative cooking methods. The number of doughnuts and exact yield are not specified.
