Ingredients
- 1 kg baby potatoes
- 6 eggs
- 1 cup spinach (Chopped)
- 0.333 cup sundried tomatoes (Chopped)
- 0.25 cup high-protein cottage cheese
- tasty cheese (For garnish; use as much as desired)
- salt and pepper (For the salted boiling water and seasoning; use to taste)
- extra-virgin olive oil (For drizzling over the potato crusts)
Steps
- 1
Boil the baby potatoes in salted water until tender. Drain them and allow them to cool slightly.
- 2
Arrange approximately 3 potatoes in each cavity of a jumbo 6-hole muffin tray.
- 3
Using the base of a cup, squash the potatoes down and mold them up the sides of each muffin cavity. Use your fingers or a spoon to help shape each potato layer into a crust.
- 4
Season the potato crusts generously with salt and drizzle them with extra-virgin olive oil.
- 5
Bake the potato crusts at 200°C for 30–40 minutes, until golden and crispy.
- 6
Meanwhile, whisk the eggs in a bowl. Add the chopped spinach, chopped sundried tomatoes, and cottage cheese, then season with salt and pepper and whisk until combined.
- 7
Transfer the egg filling to a jug or another container with a spout so it can be poured more easily.
- 8
Carefully remove the muffin tray from the oven and pour the egg mixture evenly into each potato crust.
- 9
Top each quiche with as much tasty cheese as desired.
- 10
Reduce the oven temperature to 180°C and bake for another 20 minutes, or until the egg is cooked through.
- 11
Allow the quiches to cool slightly, then carefully remove them from the muffin tray.
- 12
Serve and enjoy. Store leftovers in an airtight container for up to 5 days. Eat them cold or reheat them in an air fryer or oven for approximately 10 minutes.
Notes
