Ingredients
- 4 Sweet potatoes (medium sized)
- 2 tbsp Butter (melted)
- 1 tbsp Brown sugar (can substitute with coconut sugar)
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 Onion (diced)
- 1.5 lb Lean ground beef (93% lean; transcript mentions bison as an alternative)
- 0.25 cup Soy sauce
- 0.25 cup Hot water (can substitute with bone broth)
- 3 clove Garlic (minced)
- 1 tsp Ginger (minced)
- 1 tbsp Honey (or brown sugar)
- 1 tbsp Cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp cold water)
- 0.5 cup Low fat Mozzarella cheese (shredded)
- Green onions (sliced for garnish)
- Sesame seeds (for garnish)
- Chili pepper (sliced for garnish)
Steps
- 1
Preheat your oven to 350°F (175°C).
- 2
Wash the sweet potatoes and pierce them several times with a fork.
- 3
In a small microwave-safe bowl, combine the butter, brown sugar, salt, and cinnamon. Microwave for 20-30 seconds until the butter is melted, then stir to combine.
- 4
Place the sweet potatoes in oven-safe meal prep containers or on a baking sheet. Brush the butter mixture generously over the surface of the potatoes.
- 5
Bake the sweet potatoes for 1 hour until tender.
- 6
While the potatoes bake, prepare the Mongolian beef. In a large skillet over low heat, sauté the diced onions for a few minutes until they are soft and translucent.
- 7
Add the lean ground beef (or bison) to the skillet. Season with salt and pepper to taste. Increase the heat slightly and cook for a few minutes until browned, breaking it up with a spoon.
- 8
Stir in the soy sauce, hot water (or bone broth), minced garlic, minced ginger, and a drizzle of honey.
- 9
Allow the mixture to simmer for a few minutes to let the flavors meld.
- 10
Pour in the cornstarch slurry and stir constantly until the sauce thickens and coats the beef.
- 11
Once the sweet potatoes are finished baking, slice them down the center. Load each potato with shredded low-fat mozzarella cheese and a generous portion of the Mongolian beef.
- 12
Garnish with sliced green onions, sesame seeds, and sliced chili peppers before serving or sealing for meal prep.
