  • 2 tsp garlic powder (For seasoning the chicken)
  • 2 tsp paprika (For seasoning the chicken)
  • 2 tsp seasoning salt (For seasoning the chicken)
  • 2 tsp Italian seasoning (For seasoning the chicken)
  • 2 tsp black pepper (For seasoning the chicken)
  • 1 tbsp olive oil (To coat the chicken)
  • 2 tbsp olive oil (For cooking the chicken)
  • 2 tbsp butter (For basting the chicken)
  • 8 oz pasta (Pasta of choice)
  • 1 yellow onion (Medium, finely diced)
  • 1 ⅓ cup sun-dried tomatoes (Chopped)
  • 7 garlic (Minced)
  • 3 tbsp sun-dried tomato oil (Oil from the jar)
  • 0.6666666666666666 cup chicken broth
  • 2 tbsp tomato paste
  • 0.6666666666666666 cup heavy cream (Room temperature)
  • 1 tsp Italian seasoning (For the sauce)
  • 1 tsp chili flakes
  • 1 tsp black pepper (For the sauce)
  • 1 tsp salt (For the sauce; pasta water is also salted)
  • 0.5 lemon juice (Juice of ½ lemon)
  • 2 tsp lemon zest
  • fresh basil (Amount not specified; use in the sauce and for finishing)
  • 0.5 cup Parmesan cheese (Grated; reserve extra for finishing if desired)
  • 0.5 cup pasta water (Reserved; add as needed for a glossy sauce)

Steps

  1. 1

Season the flattened chicken breasts with the garlic powder, paprika, seasoning salt, Italian seasoning, and black pepper. Coat them thoroughly with 1 tablespoon olive oil.

  2. 2

Bring a pot of salted water to a boil. Add the pasta and cook until just shy of al dente. Reserve ½ cup of the pasta water, then drain the pasta and toss it with a little oil to prevent sticking.

  3. 3

Heat a large pan, ideally stainless steel, over medium heat for a few minutes. Test the surface by flicking on a tiny amount of water; it should dance across the pan.

  4. 4

Add 2 tablespoons olive oil to the pan and increase the heat to medium-high. Add the seasoned chicken and sear for 3–4 minutes per side, until golden.

  5. 5

Add the butter to the pan and baste the chicken with the melted butter to finish cooking. Remove the chicken from the pan and let it rest.

  6. 6

Add the diced onion to the same pan. Cook for 5 minutes, until soft and lightly golden.

  7. 7

Add the sun-dried tomato oil and chopped sun-dried tomatoes. Cook for 2 minutes.

  8. 8

Add the minced garlic and cook for 2 minutes more.

  9. 9

Pour in the chicken broth and simmer for a couple of minutes.

  10. 10

Add the tomato paste and room-temperature heavy cream. Season with the Italian seasoning, salt, black pepper, and chili flakes.

  11. 11

Add the lemon juice, lemon zest, and fresh basil to the sauce.

  12. 12

Add the cooked pasta and grated Parmesan to the sauce. Add splashes of reserved pasta water as needed until the sauce reaches a glossy, saucy consistency.

  13. 13

Slice the rested chicken and place it on top of the pasta. Finish with extra Parmesan and fresh basil, then serve.

Notes

The source does not specify an internal temperature or exact final cooking time for the chicken; cook it through before serving. The amount of fresh basil and the additional oil used to toss the drained pasta are not specified.
