Baking Soda Crispy Tofu

Ingredients
- 280 g firm tofu (cut into cubes; can also use extra-firm or super-firm)
- 0.25 cup hot water (tap-hot)
- 1 tsp baking soda
- 2 tbsp cornflour (also known as cornstarch)

In a small bowl, whisk together 1/4 cup of tap-hot water, 1 teaspoon of baking soda, and 2 tablespoons of cornflour to create a smooth slurry.

Add the cubed tofu to the slurry and let it soak for a couple of minutes. If using extra-firm or super-firm tofu, you may want to leave it in for slightly longer.

Preheat your air fryer to 200°C (400°F).

Remove the tofu from the slurry and place it directly into the preheated air fryer basket.

Air fry for 10-12 minutes until the outside is golden brown and crispy. Alternatively, bake on a non-stick tray in a preheated oven for approximately 20 minutes.
Notes
The baking soda reaction gives the tofu a texture and flavor profile reminiscent of eggs. Texture results will vary based on the firmness of the tofu used.
