Ingredients
- 1.5 cup White beans (cooked and rinsed)
- 0.5 cup Cashew butter (creamy)
- 0.25 cup Maple syrup
- 1 tsp Vanilla extract
- 0.25 tsp Almond extract
- 0.5 cup Oat flour (gluten-free if needed)
- 0.5 cup Dark chocolate chips (for the shell)
- 1 tsp Coconut oil (to thin the chocolate)

In a food processor, combine the rinsed white beans, cashew butter, maple syrup, vanilla extract, and almond extract.

Process the mixture until completely smooth and creamy, scraping down the sides as necessary.

Add the oat flour to the food processor and pulse until a thick, dough-like consistency forms.

Press the dough into a silicone donut mold, smoothing the tops with a spoon or your fingers.

Place the donut mold in the freezer for about 30-40 minutes to allow the donuts to set and become firm enough to handle.

While the donuts chill, melt the dark chocolate chips and coconut oil together in a small bowl using 30-second intervals in the microwave or a double boiler until smooth.

Remove the donuts from the freezer and carefully pop them out of the silicone mold.

Dip each donut into the melted chocolate to coat the top or the entire surface, then place on a parchment-lined tray.

Notes
