Ingredients
- 1.5 lb Boneless, skinless chicken breasts (Cut into 1-inch cubes)
- 2 Eggs (Large)
- 1.5 cup Panko breadcrumbs
- 0.333 cup Water (Divided)
- 2.5 tsp Cornstarch
- 1.5 tsp Olive oil
- 1.5 tbsp Garlic (Minced)
- 1 tsp Fresh ginger (Peeled and minced)
- 0.333 cup Honey
- 3.5 tbsp Soy sauce
- Green onions (Sliced; optional, for serving)
- Sesame seeds (Optional, for serving)
- Cooked rice or cauliflower rice (Optional, for serving)
- Steamed broccoli or other vegetables (Optional, for serving)
- Sriracha (Optional; add to the sauce for heat)
- Red pepper flakes (Optional alternative to Sriracha; add to the sauce for heat)
Steps
- 1
Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
- 2
Whisk the eggs in a bowl. Pour the panko breadcrumbs into a separate shallow dish.
- 3
Dip the chicken pieces into the egg, allowing excess egg to drip off, then roll them in the panko until coated on all sides.
- 4
Arrange the coated chicken in a single layer on the prepared baking sheet so the pieces cook evenly.
- 5
Bake for 14–18 minutes, depending on the size of the pieces, until the centers reach 165°F (74°C). The coating may not become deeply golden; do not extend the baking time just to add color.
- 6
While the chicken bakes, mix 1 tablespoon of the water with the cornstarch until smooth. Stir in the remaining water.
- 7
Heat the olive oil in a small saucepan over medium heat. Add the garlic and ginger and cook for about 30 seconds, just until fragrant.
- 8
Remove the saucepan from the heat. Stir in the honey and soy sauce, then whisk in the cornstarch mixture. If desired, add Sriracha or red pepper flakes for heat.
- 9
Return the saucepan to the heat and bring the sauce to a boil, stirring until thickened, about 30 seconds to 1 minute.
- 10
Once the chicken is cooked, toss it with the sauce immediately before serving to help the panko retain its crisp texture.
- 11
Finish with sliced green onions and sesame seeds, if using. Serve over cooked rice or cauliflower rice with steamed broccoli or other vegetables, if desired.
Notes
The author cautions that the chicken softens the longer it sits in the sauce, so coat it just before serving. Serving ingredients are optional. The source does not give quantities for optional garnishes, rice, vegetables, Sriracha, or red pepper flakes.
