Ingredients

  • 1.5 lb Chicken thighs (Boneless, skinless; seasoned with jerk seasoning packet and various spices)
  • 1 lb Mini penne pasta (Boiled with salt and chicken bouillon)
  • 2 Chicken bouillon cubes (Added to the pasta boiling water)
  • Salt (For boiling water)
  • 2 Bell peppers (Red, yellow, or orange (no green); sliced into strips)
  • 2 tbsp Avocado oil (For sautéing peppers)
  • 2 cup Heavy whipping cream (For the sauce base)
  • 1 cup Parmesan cheese (Grated)
  • 1 packet Jerk seasoning (Used for chicken and added to sauce)
  • Cajun seasoning (To taste, for extra spice)
  • Garlic powder (Added at the end)
  • Black pepper (Added at the end)

Steps

  1. 1

Bring a large pot of water to a boil. Add salt and 2 chicken bouillon cubes to the water.

  2. 2

Season the chicken thighs thoroughly with the jerk seasoning packet and any additional desired spices.

  3. 3

Add the mini penne pasta to the boiling water and cook according to package directions until al dente.

  4. 4

In a skillet over medium heat, cook the chicken thighs, flipping them frequently (the author suggests flipping up to 20 times) until fully cooked through and browned.

  5. 5

Remove the chicken from the pan and set aside. Once cooled slightly, dice the chicken into bite-sized pieces.

  6. 6

Drain the pasta and set aside.

  7. 7

Wash the bell peppers and cut them into strips. Avoid cutting them too small as they will cook down.

  8. 8

In the same pot used for the pasta, heat avocado oil and sauté the bell peppers. Season them with a bit of jerk or Cajun seasoning.

  9. 9

To make the sauce, add heavy whipping cream and grated parmesan cheese to the pot with the peppers.

  10. 10

Add more jerk seasoning and Cajun seasoning to the sauce. If the sauce is too thick or not enough, the author suggests adding a splash of pre-made pasta sauce or more cream.

  11. 11

Add the diced chicken and the cooked noodles back into the pot.

  12. 12

Mix thoroughly over low heat until the sauce is well-combined and coats everything evenly.

  13. 13

Finish by stirring in garlic powder and black pepper to taste before serving.

Notes

The author mentions using a jerk seasoning packet because she couldn't find jerk sauce. She also notes that she avoids green bell peppers for this specific recipe. If the sauce isn't 'stretching' (not enough volume), she suggests adding a bit of extra sauce or cream to help it coat the noodles.
