Ingredients
- 4 cup rolled oats (plain)
- 1 cup pepitas (pumpkin seeds)
- 0.5 cup sunflower seeds
- 1 tsp cinnamon
- salt (pinch)
- 0.5 cup coconut oil (melted)
- 0.5 cup honey
- 1 tsp vanilla extract

Preheat the oven to 180°C (350°F) and line a large baking sheet with baking paper.

Place the rolled oats, pepitas, sunflower seeds, cinnamon, and salt into a large mixing bowl and stir to combine.

Add the melted coconut oil, honey, and vanilla extract to the dry ingredients and mix very well until everything is evenly coated.

Spread the mixture evenly across your prepared baking pan.

Use a spatula to press the mixture down firmly into the pan to ensure it sticks together for clusters.

Bake for approximately 25 minutes or until the granola is golden brown.

Remove from the oven and allow to cool completely in the pan for at least 1 hour.
