Ingredients
- 1 cup unsalted butter (2 sticks; preferably cultured; softened at room temperature)
- 0.75 cup granulated sugar
- 0.75 cup light brown sugar (packed)
- 6 g kosher salt (heaping teaspoon)
- 2 cups unsweetened peanut butter (creamy or chunky)
- 2 eggs (at room temperature)
- 2 cups all-purpose flour
- 2 tbsp sugar for sprinkling (Use coarse sugar, or granulated sugar; part of the sugar-salt topping mixture)
- 1 tbsp salt for sprinkling (Use flaky sea salt, or kosher salt; part of the sugar-salt topping mixture)
Steps
- 1
Heat the oven to 350°F (175°C). Line two baking sheets with parchment paper or nonstick liners.
- 2
Using a mixer fitted with a paddle attachment, cream the softened butter, granulated sugar, and light brown sugar until smooth and fluffy, at least 3 minutes.
- 3
Add the peanut butter and room-temperature eggs to the butter mixture, and mix until incorporated.
- 4
Add the flour and kosher salt. Mix just until well combined and no white flour remains visible; do not continue mixing beyond that point.
- 5
Using a small cookie scoop with about a 2-teaspoon capacity, scoop the dough onto the prepared baking sheets. The portions should have rounded but craggy tops. The cookies will not spread much or change shape during baking, so they may be placed fairly close together while still leaving room for air circulation so they can brown.
- 6
In a small bowl, mix 2 tablespoons sugar with 1 tablespoon salt to make the topping mixture.
- 7
Sprinkle each cookie lightly with the sugar-salt mixture, working it into the crags and crannies.
- 8
Bake for 12 to 15 minutes, until the cookies are set and golden-brown.
- 9
Carefully lift or slide the cookies off the baking sheets and transfer them to racks to cool.
- 10
Once cool, store the cookies in airtight containers in layers separated by parchment paper.
