Ingredients

  • 1.5 fresh cucumbers (Peeled and roughly chopped; the source says to save the other half for a salad or garnish.)
  • 2.5 cup water (Divided: 1.5 cups for blending the cucumbers and 1 cup for blending the kiwis.)
  • 6 fresh kiwi fruits (Peeled.)
  • 1.5 tsp fresh ginger (Grated.)
  • 2.5 tbsp maple syrup (Use 2–3 tablespoons; leave out for a raw diet. Nutrition is estimated using the midpoint quantity.)
  • ice (For serving, as desired.)

Steps

  1. 1

Peel and roughly chop 1½ cucumbers. Reserve the other half mentioned in the source for a salad or garnish.

  2. 2

Add the chopped cucumbers and 1½ cups of the water to a blender. Blend until completely smooth.

  3. 3

Place a fine-mesh stainless-steel strainer over a large glass or pitcher. Pour in the cucumber mixture and strain out the pulp. Set the strained cucumber juice aside.

  4. 4

Peel the kiwis. Add them to the clean blender with the remaining 1 cup water, grated ginger, and maple syrup, if using.

  5. 5

Blend the kiwi mixture until smooth.

  6. 6

Strain the kiwi mixture through the fine-mesh strainer into the large glass or pitcher containing the cucumber juice. Stir the juices together to combine.

  7. 7

Pour the juice over ice and serve immediately.

Notes

The source recommends a fine-mesh stainless-steel strainer to remove pulp. Omit the maple syrup for a raw diet. The recipe is best served chilled over ice.
