Ingredients

  • 4 large russet potatoes (Peeled, or leave unpeeled for extra-crispy fries; cut into thin slices)
  • 1 egg
  • 3 tbsp all-purpose flour
  • 2 tbsp cornstarch
  • salt (To taste; use in the boiling water and potato coating)
  • 1 tbsp red chili flakes (For the potato seasoning)
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil (Mixed into the potato coating)
  • oil for frying (Amount not specified; heat over medium heat)
  • 0.5 cup mayonnaise (For the spicy sauce)
  • 2 tbsp jalapeños (Chopped; for the spicy sauce)
  • 1 tbsp Sambal oelek sauce (Alternatively, use any chili sauce plus 1/2 tbsp red chili flakes)
  • 0.5 tbsp red chili flakes (Use only as part of the sauce alternative, together with any chili sauce, instead of sambal oelek)
  • 1 tbsp fresh garlic (Finely minced; for the spicy sauce)
  • salt (To taste; for the spicy sauce)
  • 1 tbsp black pepper (For the spicy sauce)
  • 1 tbsp lemon juice (For the spicy sauce)

Steps

  1. 1

Peel the potatoes, if desired. The source notes that leaving the skins on can produce extra-crispy fries. Wash the potatoes and cut them into thin slices.

  2. 2

Bring salted water to a boil and boil the sliced potatoes for 3–4 minutes.

  3. 3

Drain the potatoes thoroughly and pat them dry after boiling. Transfer them to a bowl.

  4. 4

Add the egg, cornstarch, all-purpose flour, salt, red chili flakes, Cajun seasoning, and olive oil to the potatoes.

  5. 5

Mix well until the potato slices are evenly coated with the egg, flour, cornstarch, seasoning, and oil mixture.

  6. 6

Heat frying oil over medium heat.

  7. 7

Fry the coated potato slices in the hot oil over medium heat until they are crispy and golden.

  8. 8

Prepare the spicy sauce by adding the mayonnaise, chopped jalapeños, sambal oelek, finely minced garlic, salt, black pepper, and lemon juice to a bowl. If substituting for the sambal, use any chili sauce plus 1/2 tablespoon red chili flakes.

  9. 9

Mix the sauce ingredients together in the bowl until combined, then serve with the crispy fries.

Notes

The source does not specify the amount or type of frying oil, or a precise frying time. Fry in batches if needed so the potatoes can crisp evenly without overcrowding the pan.
