Ingredients
- 250 ml Lukewarm milk (At a temperature suitable for yeast, not hot)
- 5 g Dried yeast (Can be replaced with 10 g fresh yeast)
- 1 tbsp Sugar
- 2 Eggs (At room temperature)
- 400 g Wheat flour (The author used type 3-0 flour; add gradually)
- 0.5 tsp Salt (Approximately; to taste)
- 2 tbsp Oil (Add at the end; a little extra oil is needed to grease the bag if the dough is stored)
Steps
- 1
Pour the lukewarm milk into a large bowl. The milk should be lukewarm, not hot, so it does not affect the yeast.
- 2
Add the dried yeast or fresh yeast and the sugar. Mix well until the ingredients are distributed throughout the milk.
- 3
Add the two room-temperature eggs and incorporate them well with a spoon.
- 4
Add the flour gradually, stirring continuously with a spoon. Use enough force to incorporate all the flour and obtain a smooth dough.
- 5
Once all the flour has been incorporated, add the salt and mix well. The dough should not be kneaded; it is enough to mix it very well with a spoon.
- 6
Add the oil and incorporate it at the end, until the dough becomes uniform.
- 7
Cover the bowl with plastic wrap and leave the dough in a warm place for 20 minutes.
- 8
After the first 20 minutes, remove the plastic wrap and stir the dough for a few moments, bringing the dough from the edges toward the center with a spoon.
- 9
Cover the bowl again with plastic wrap and leave the dough in a warm place for approximately another 30 minutes, until it becomes fluffier and airier.
- 10
Use the risen dough for the desired recipe, such as pies, doughnuts, pizza, bread, buns, croissants, or rolls. The dough will be quite sticky; sprinkle flour on the work surface and your hands to shape it more easily.
Notes
The dough can be stored for at least 5 days in the refrigerator in a plastic bag greased with a little oil. Before shaping, use flour because the dough remains sticky after rising.
