Ingredients
- 1.75 cup all-purpose flour
- 60 g natural cocoa powder
- 1 tsp cornstarch
- 1 cup cold salted butter (Cut into small pieces.)
- 50 g granulated sugar
- 170 g dark brown sugar
- 1 tsp baking powder
- 0.5 tsp baking soda
- 1 tsp vanilla bean paste
- 0.75 cup semi-sweet chocolate chips
- 0.333 cup white chocolate chunks
- 0.5 cup milk chocolate
- 2 cold eggs
Steps
- 1
In a stand mixer or mixing bowl, crack in the cold eggs and add the granulated sugar. Beat on high speed until the sugar is completely dissolved and the mixture becomes light and pale.
- 2
Add the dark brown sugar and beat for 2–3 minutes.
- 3
Add the cold salted butter pieces and beat on high speed until the mixture is creamy and smooth.
- 4
Add the vanilla bean paste and mix until combined.
- 5
In a separate bowl, combine the all-purpose flour, baking powder, baking soda, cornstarch, and natural cocoa powder. Mix the dry ingredients well.
- 6
Gradually add the dry-ingredient mixture to the wet batter, mixing as you go.
- 7
Add the semi-sweet chocolate chips, white chocolate chunks, and milk chocolate. Mix only until just combined; do not overmix the dough.
- 8
Scoop the dough into 6-ounce balls and place them on parchment paper.
- 9
Freeze the dough balls for at least 1 hour. Do not place more than 4 cookies on one baking sheet.
- 10
Preheat the oven to 350°F.
- 11
Bake the cookies for 13–16 minutes, until the edges are crispy while the centers remain gooey and soft.
- 12
Let the cookies cool completely before consuming.
Notes
The source does not specify the exact number of cookies produced beyond the 6-ounce dough-ball size. The chocolate ingredients are listed separately but are added together during mixing.
