Ingredients
- 10 eggs (Pete & Gerry’s organic pasture-raised eggs; yolks used in filling and whites for serving)
- 30 g Parmesan (grated, for the filling)
- 3 anchovies
- 2 garlic (cloves, for the filling)
- 0.5 tsp mustard
- 1 tsp lemon juice
- 0.5 cup mayonnaise
- salt (to taste, if needed for filling)
- chives (thinly sliced, for garnish)
- 35 g Parmesan (grated, for Parmesan crisps)
- 2 tbsp extra-virgin olive oil
- 1 garlic (clove, grated, for breadcrumbs)
- 0.333 cup panko (breadcrumbs)
- salt (for the garlic breadcrumbs)
- 1 egg yolk (fresh; optional, only if the filling splits, to emulsify)
Steps
- 1
Bring a pot of water to a boil. Add the eggs and boil for 10 minutes.
- 2
Transfer the eggs to ice water and leave them until cool enough to handle. Peel them, cut each in half, and remove the yolks, keeping the whites intact for filling.
- 3
Put the cooked yolks in a food processor with the 30 g grated Parmesan, anchovies, 2 garlic cloves, mustard, and lemon juice. Pulse until combined.
- 4
Add the mayonnaise and pulse just until combined; avoid overmixing. Taste and season with salt if needed.
- 5
If the filling splits, add one fresh egg yolk and pulse until emulsified.
- 6
Heat the oven to 350°F (175°C). Line a quarter sheet pan with parchment paper.
- 7
Arrange the 35 g grated Parmesan in small piles on the prepared pan, leaving space between them. Bake for 8–10 minutes, until golden. Set aside and allow the crisps to cool and harden.
- 8
Heat the olive oil in a small pan.
- 9
Add the grated garlic and panko. Cook, stirring frequently, for 4–5 minutes, until the breadcrumbs are golden. Season with salt.
- 10
Pipe the filling into the egg-white halves. Top each with a piece of Parmesan crisp and a sprinkle of garlic breadcrumbs, then sprinkle with chives.
- 11
Pipe any leftover filling onto crostini or crackers.
Notes
The source does not specify an amount for salt or chives, or a quantity of crostini/crackers for serving. The optional fresh yolk is only used if the filling splits.
