Ingredients
- 1.5 lb ground beef or bison
- 0.5 tsp sea salt
- 1 large onion (Diced)
- 4 fresh garlic cloves (Minced)
- 1 tsp crushed red pepper flakes
- 12 oz sweet mini peppers (Thinly sliced)
- 4 medium carrots (Thinly sliced)
- 0.5 cup hot sauce (Of your choice)
- 0.333 cup raw honey
- 0.25 cup coconut aminos (Alternatively use tamari, Braggs liquid aminos, or low-sodium soy sauce)
- 0.25 cup unseasoned rice vinegar
- 2 cup cooked brown rice or quinoa (Use 1/2 cup per bowl)
- 4 cup steamed broccoli
- green onions (Sliced, for garnish)
Steps
- 1
Combine the hot sauce, raw honey, coconut aminos, and unseasoned rice vinegar in a bowl to make the Firecracker Sauce. Set it aside.
- 2
Preheat a large skillet over medium-high heat. Add the ground beef or bison and cook, breaking it up and mincing it with a wooden spoon as it cooks.
- 3
Once the beef is no longer pink, drain any excess grease from the skillet.
- 4
Add the sea salt, diced onion, minced garlic, and crushed red pepper flakes to the skillet. Cook, stirring often, for 5 minutes. If the mixture begins to brown too quickly, add a bit of water.
- 5
Pour the Firecracker Sauce over the cooked meat, then add the sliced sweet mini peppers and carrots.
- 6
Continue cooking for about 8 minutes more.
- 7
To assemble each bowl, add 1/2 cup of cooked brown rice or quinoa.
- 8
Top each bowl with an equal portion of the firecracker beef and add steamed broccoli alongside it.
- 9
Garnish with sliced green onions and serve.
Notes
Adjust the spiciness by using more or less crushed red pepper flakes. Quinoa may be used instead of rice for more protein. The beef can be made ahead for meal prep. If it begins to brown too quickly, add a bit of water.
